Homemade Strawberry Rhubarb Pie

This pie is a personal favorite of mine. It is sweet, tangy, sour, fruity and quite delicious! During the summer my mother and I go strawberry picking and stock up for the year. The strawberries are used to make homemade jam and this pie. As for the rhubarb it is grown in our backyard.

The pie crust is buttery and flaky and pairs perfectly with the strawberry rhubarb pie filling! If I make a pie I usually end up making two simply because of how fast family and friends consume it. For this recipe though, I will show you how to make 1 pie. If you would like two pies simply double the proportions.

How to make Strawberry Rhubarb Pie



  • 1 cup of white sugar
  • 3/4 cup of all-purpose flour
  • 2 cups fresh rhubarb
  • 2 cups fresh strawberries
  • 3 tablespoons of butter (room temperature)
  • 1/2 teaspoon of cinnamon
  • 1 egg yolk

Pie Crust:

  • 1 1/4 cups of all-purpose flour
  • 1/2 cup of butter
  • 1/4 cup of water
  • 1/2 teaspoon salt

Begin recipe by making your filling first. Start by dicing up your fresh rhubarb and strawberries then add them to a mixing bowl. Combine sugar, all-purpose flour, butter, cinnamon and egg yolk to the rhubarb and strawberries. Mix and set aside.

For the pie crust, begin by combing the flour, butter and salt in a mixing bowl. Start to knead the dough using your hands. After a minute or when the flour and butter are mostly combined add in water and salt. Finish kneading the dough remembering not to over knead it. If you do over knead it the dough will become less flaky.

Next, set up a clean working area on your counter or using wax paper. Sprinkle flour on top of surface to allow for less sticking. Place your ball of dough on to the surface and begin to roll out to around 1/4 of an inch thick ( or thicker ). Lift pie crust and place into a pie pan (8 inch radius). Begin to clean up the edges of the pie crust. Now add your filling into the pie.

If desired you can use your left over pie crust and create a pattern for the top of your pie. Depending on how thick you have made your pie crust you may have to make more dough to finish this steep. It is not a necessity unless you desire a top for your pie.


Place pie in over for 35-40 minutes atย 400 degrees celsius. Time may very depending on the oven. Crust should be golden brown when finished. Enjoy!

  1. I ate my first ever strawberry rhubarb pie last weekend at 44 and X in NYC and I can tell you it won’t be the last time! I don’t know what I was afraid of all these years, the pie was absolutely delicious! I’m so happy to see your post and now I can make it for myself, too bad I don’t have wild strawberries and rhubarb growing in my backyard like you do, I’m sure that makes your pie extra special ๐Ÿ™‚

  3. This is my all time favorite pie flavor. Rhubarb is just so delish! My wonderful mother always made this to-die-for rhubarb compote which was a throw back to her days as a nun. A neighbor to the convent grew gobs and gobs of rhubarb and would give piles of it to the nuns. They would boil down the rhubarb with a little orange juice/orange rind and sugar, then eat like queens! No need for the pie shell just a spoon. I grew up eating it solo or putting it on everything – oatmeal, ice cream, yogurt, scones, etc.

  4. Isn’t that just the BEST combination? My mother always made strawberry-rhubarb jam when I was a kid and the rhubarb offsets the sweetness of the strawberry and sugar very well. I recently saw a recipe for a strwberry-rhubarb cheese cake… I’ll try it and let you know ๐Ÿ™‚

  5. This rhubarb recipe sounds great. I’ll ask my husband to bake it. We grow rhubarb, or rather my husband does, and he makes rhubarb sauce with it, as well as rhubarb crisp, which is easy to make and very tasty.

  7. I fell in love with rhubarb working on a farm in Spain last spring during which time strawberries and rhubarb were two of the only things ready to harvest! I made crisp and compote a lot that summer, but I’m looking forward to trying your pie recipe!
